• melt your ¼c butter on broil in the oven but just until right before there are brown spots in the oil. Maybe just at the edge of the butter turning opaque to clear.
  • add ¼c sugar and mix as much as the butter can dissolve the sugar
  • next mix in 2t vanilla, then 2 eggs
  • mix in room temp 1¾c buttermilk
  • add dry ingredients: 120g cake flour, whip until smooth
  • then: 120g cake flour, 1t b.soda, 1t salt, until combined gently
  • fry on oiled griddle on med-low heat, flipping just once while cooking
